This exotic dish is ready in half an hour, but tastes like you have been in the kitchen all day long. Great success!

Ingredients
250g (0.5 pound) couscous
1 cucumber
4 tomatoes
4 tablespoons tomato ketchup
1/2 teaspoon ground cumin
3 tablespoons olive oil
3 spring onions
400g (0.9 pound) beef strips
1 to 2 tablespoons of red curry paste
salt and pepper
Preparation
- Add one part of boiling liquid (e.g. water or chicken stock) to one part couscous. Cover with a plastic wrap or lid and leave for 5 minutes or so. Remove the cover and stir with a fork.
- Wash the cucumber, remove the seeds and membrane and cut into cubes. Do the same with the tomatoes.
- Next add 2 tablespoons of oil, cumin, salt and pepper to the tomato ketchup and give it a good stir.
- Add this mixture to the couscous, together with the cucumber and tomato cubes.
- Now it’s time to take the red curry paste, add the remaining oil and use this to marinate the beef strips. Let this sit for a few minute, while cutting the spring onions into small rings.
- Heat your wok or stir-fry pan and fry the beef for about 2 minutes. The spring onions should be added the last 30 seconds or so, otherwise they will be overcooked.
- Season the meat to taste with salt and pepper and serve with the couscous salad.
- Done!
